I recently watched a video by OverlySarcasticProductions (I highly suggest them), and the newest Trope Talk is on Mary Sues.
Now, Red goes into it a lot and she's great at analyzing this stuff, but the biggest thing that stuck out to me was what makes a Mary Sue a Mary Sue. Really, it came down to the writing, not the actual character. What makes a character seem Sue-like is that the story is entirely focused around them. There's little to no supporting cast that's not developed and the universe bends around them.
Really, Sues are made not from the character themself, but how you write the character into the universe. The character is navigating the universe, not the other way around.

I highly suggest watching their videos, especially Trope Talk for writing. Red discusses tropes and questions plots and character types and it's good food for thought for anyone that's writing.
