ABOUT:
The name of the biscuit comes from the Italian maccarone or maccherone meaning "paste", referring to the original almond paste ingredient; this word itself derives from ammaccare, meaning "to crush".
Recipe Cook Time: 60 mins, preparation time: 30 mins.
INGREDIENTS:
1) 200 ml aquafaba (canned chickpeas water, just the water).
2) 200 grams almond flour.
3) 200 grams confectioners’ sugar.
4) Food coloring (optional).
5) 1 cup of white sugar.
6) 1/4 cup water.
7) Vanilla or any extract (to taste) (optional).
8) Ganache or buttercream or Jam.
METHOD:
1) Drain the water from a large can of chickpeas into a small saucepan. Simmer the liquid until it reduces slightly.
2) Sift the almond flour and confectioners sugar into a large bowl. Make sure to blend it properly.
3) Pour 75ml of the aquafaba into the bowl of your mixture and set aside.
4) Stir your food coloring and extract into the leftover aquafaba and pour it over the almond flour and confectioners’ sugar mixture. Mix thoroughly with a spatula. Set this mixture aside.
