Gelato is usually made from whole milk and cream is sometimes added to increase the creamy texture. North American-style ice cream contains more butterfat than gelato since more cream is added.
Gelato have a lightness and freshness of flavor.Preparation Time: 20 mins, Freezing Time: 5 hrs.
INGREDIENTS:
1) 1/2 cup sugar.
2) 2 tablespoons cornstarch.
3) 2 cups whole milk, divided.
4) 5 ounces semisweet chocolate, finely chopped.
5) 1/2 cup heavy cream.
6) 1 teaspoon vanilla extract.
7) Pinch of salt.
METHOD:
1) In a medium saucepan, combine sugar, cornstarch, and salt.
2) Gradually add 1/4 cup milk, whisking to dissolve cornstarch.
3) Whisk in remaining milk.
4) Cook over medium heat until mixture thickens and comes to a boil. Allow to boil for 1 minute, stirring occasionally.
5) Remove from heat.
6) Add chocolate and allow to sit for 1 minute and let it sit until chocolate is melted and smooth.
7) Transfer mixture to a medium bowl.
8) Mix in the cream and vanilla.
9) Cover and refrigerate for at least 2 hours or overnight.
10) Transfer to an ice cream maker.
11) Then transfer the gelato to an airtight container and freeze until hardened, about 3 hours.
12) Let soften 5 minutes before serving.
SUGGESTION:
Add coarsely crushed toffee candy, toasted nuts, chocolate chips, or any other candy during last 2 minutes of churning in ice cream maker.
