This is a simple Victoria cake recipe. It is one of the most popular cakes and tastiest cakes and is used with all different toppings and fillings.
This recipe is a all-in-one method and is fairly simple.Ingredients:
Two medium sized cake tins
4 medium eggs
225g Self-raising flour
225g Caster sugar
2tsp Baking powder
225g Butter at Room temperatureMethod:
1-Grease and line the tins with baking parchment.
2-Preheat the oven to 180c/ 160c Fan/ Gas 4.
3-Once your ingredients are measured mix all of them together in a big bowl until smooth and creamy.
4-Divide the mixture between two tins I recommend using a scale to do this so that the amount of mixture is an even amount.
5-Bake for 25-30 minutes. Run a small knife around them and gently flip over onto the cooling rack.
6-Leave to cook on a cooling rack.
7-Place one side of the cake upside down and spread with your favourite jam. Top with the second cake top-side up and sprinkle with a little caster sugar.
