Rice pudding is a dish made from pudding rice mixed with water or milk and other ingredients such as cinnamon and fruit. It has a creamy consistency and tastes good cold or warm.
Ingredients:
40g Butter
100g Pudding rice
75g Caster sugar
1 litre full-fat milk
150ml Double cream
1tsp Vanilla extract
Pinch of salt
Ground nutmeg (grated)Method:
1-Preheat the oven to 140c/Gas 1.
2-Melt the butter in a casserole dish over medium heat. Add the rice and stir well, and add the sugar and stir.
3-Continue stirring until everything is dissolve and the rice becomes sticky with sugar.
4-Pour in the milk and stir so there are no lumps.
5-Add the cream and vanilla and bring to simmer.
6-Once reached stir once more and grate at least a third of the nutmeg over the surface.
7-Bake for an hour and thirty minutes and cover with foil.
8-When the pudding has a golden brown layer and wobbles in the middle it is ready.
9-Serve warm or cold.
