Summer Pavlova

As summer is coming closer it's time to make some refreshing and yummy deserts. This pavlova brings all the taste and flavour of summer combined in a desert!

For the meringue:
4 egg whites
250g caster sugar
1 tsp corn flour
1 tsp vanilla extract

For the topping:
500g strawberries (cut in half)
200g red currants (stalks removed)
3 tbsp icing sugar
350ml double cream

Method:

1-Preheat oven to 150c/130cFan/Gas 2

2-Mark out a dinner plate using a pencil on baking parchment.

3-Whisk 4 egg whites with a hand whisk or spoon. They should form stiff peaks, whisk in the caster sugar a small amount at a time until there is a gloss.

4-Whisk in the corn flour and vanilla extract.

5-Spread the meringue inside the circle, make the sides higher than the middle.

6-Bake for one hour and then turn off the oven to cool.

7-Chop 100g of the strawberries and mix with 100g of red currants and add 2 table spoons of the icing sugar.

8-Blitz until smooth in a food processor.

9-Whip 350ml of double cream with the last of the icing sugar. Spread over the meringue.

10-Place the remaining fruit on the cream and pour the sauce over the whole dish.
