Shortbread is a traditional shortbread biscuit from Scotland and can come in many forms; Half of the biscuit dipped in chocolate (Millionaires shortbread) or a fruity biscuit. This recipe is super yummy and doesn't take much time to prepare. This recipe is just for a original plain shortbread.
Ingredients:
225g Plain flour
100g Semolina
225g Butter
100g Caster sugar
25g Demerara sugarMethod:
1-Preheat the oven to 160C/140Fan/Gas 3.
2-Lightly grease a 23x30cm roasting or tray bake tin.
3-Mix together the flour and semolina.
4-Add the butter and sugar and run the mixture with your fingertips until the mixture is just binding together.
5-Knead lightly until a smooth dough.
6-Press into the tin and level out with a spatula.
7- Prick all over with a fork, sprinkle with Demerara sugar and bake for about 35 minutes until a pale golden brown.
8-Leave to cool and cut into 30 fingers.
