Touka and Nishiki replied, "Nice to meet you."
"I'll give the job of teaching Kaneki the basics to you, Touka." Yoshimura explained.
"HUH?! WHY DO I HAVE TO BE THE ONE TO TEACH HIM?!" Touka shouted but felt embarrassed because now all of the customers are looking at her.
"Keep your voice down you bird-brain." Nishiki said.
"Because you're the most experienced here". Yoshimura replied calmly. He seemed unconcerned about Touka shouting at him.
"...Fine..." said Touka reluctantly.
"Don't you dare get in my way!" Touka shouted as she pointed her finger at Kaneki.
Scary. That was the first thing that came to his mind as he replied "Yes" timidly.
Clap. Clap. 2 clapping sounds filled the air. "Okay you are all dismissed. Get back to work." Yoshimura announced.
WORKING~
Touka is at the counter preparing coffee for customers. She gestured to Kaneki to go over and she will teach him how to make coffee.
First. Pour water in a kettle and put it on the stove to boil. You will need about twelve ounces (340g) if you want to make enough coffee for one mug, although you will need some extra in order to soak the filter, so put more water to boil. Water used must be fresh and cold.
Second. Prepare the coffee while the water boils. Use one tablespoon of grounds for every cup of water (or approximate six ounces/170g). Remember, one tablespoon of whole coffee beans per three ounces of water.
Third. Prepare the pour-over setup. Place the glass dripper on top of the mug and place a paper filter inside.
Fourth. Presoak the filter and mug by taking the kettle off the heat and pouring boiling water over the filter. This will rinse out the paper taste.
Fifth. Measure out the water. For example, with three tablespoons of beans having been freshly ground, nine ounces of water will do. Use the measuring cup. Let it sit and cool to off-boil (195°F or 90°C).
Sixth. Dump out the water that's in the mug. Pour milk and sugar into the mug.
Seventh. Add the grounds to the filter.
Eighth. Pour a little boiling water over the grounds, just enough to soak them. The coffee will begin to froth, and create a "flume." Wait 30 seconds for the flume to go down.
Pour the rest of the water into the dripper in a spiral pattern, beginning at the center. Don't pour directly onto the filter, always pour onto the grounds. While pouring, make sure the dripper stays on top of the mug. As you're pouring, keep checking that the mug does not overflow.
Ninth. Wait for the water to drain all the way into the mug and you're done.
Kaneki was standing only one meter away from Touka and looking at her do all the steps to make coffee. Actually close up, she's quite pretty...Her long eyelashes and her charming eyes. Her slim nose and soft lips which looks so nice to touch... No no.. What am I doing thinking about her like that? She's nothing but a scary person...
