If Mabel was a human, I picture her as a cheerful employee who's an expert at special effects, she often helps Dipper with his animation with her knowledge of special effects.
While she's not as a serious as Dipper, she and him get along very close, and she often helps Dipper with solving any mystery that Dipper is onto, she's also more sociable than Dipper as she's easy to make friends with, though she isn't necessarily the best when it comes to dating, but she still gives good love advice to anyone who needs advice on dating.
One day, Dipper and Mabel received word from the CEO that the studio or toy factory that they worked at just shut down, leaving the twins both confused, so, they decided to head out and see what could be the reason behind the recent closing.
Now, if she were portrayed as an entity, Mabel would be a pink monkey who is one of the two of the main protagonists of Dipper and Mabel's preschool show, Dipper & Mabel.
Mabel is always willing to go out on an adventure, and help those with her kindness, while she can be obnoxious at times, Mabel is a great role model to kids who want to help others and be happy, to her, when everyone is happy, Mabel feels happy.
One day, Mabel and Dipper noticed that animation studio or toy factory has been awfully quiet, feeling curious, the twins set out to search for the reason why it's been so quiet, unaware of whatever lies ahead of them...
