Ingredients:
- 3 eggs
- 3 tablespoons corn oil
- 3 tablespoons mayonnaise
- 3 tablespoons margarine
- 3 tablespoons baking powder
- 3 tablespoons powdered milk
- 1 cup brown sugar
- 1 can of large evaporated milk (evap)
- 2 cups cake flour
- Fruits/Vegetables of your choice:
- 3 pieces of ripe bananas
- 1 cup grated carrots and/or apples
- 1/2 cup mashed squash with malunggayInstructions:
1. Preheat your oven to 180°C (356°F). Grease and line a baking pan with parchment paper.
2. In a large mixing bowl, combine the following ingredients: 3 eggs, 3 tablespoons corn oil, 3 tablespoons mayonnaise, 3 tablespoons margarine. Mix them until well combined.
3. In a separate bowl, sift together 2 cups of cake flour and 3 tablespoons of baking powder. Gradually add this dry mixture to the wet mixture and continue to stir until you have a smooth batter.
4. Mix in 3 tablespoons of powdered milk and 1 cup of brown sugar, ensuring they are well incorporated into the batter.
5. Add the large can of evaporated milk (evap) to the batter and stir until you have a consistent, lump-free mixture.
6. Now, it's time to fold in your choice of fruits and vegetables. Add 3 ripe bananas (mashed), 1 cup of grated carrots and/or apples, and 1/2 cup of mashed squash with malunggay (moringa leaves) into the batter. Mix them thoroughly into the batter.
7. Pour the batter into the prepared baking pan, spreading it evenly.
8. Bake the cake in the preheated oven for about 30-35 minutes or until a toothpick inserted into the center comes out clean.
9. Once the cake is done, remove it from the oven and let it cool in the pan for a few minutes. Then, transfer it to a wire rack to cool completely.
10. Once cooled, you can enjoy your delicious and nutritious fruit or vegetable fruit cake.
