Classic New York Cheesecake

A rich and velvety New York-style cheesecake on a buttery graham cracker crust, topped with fresh, sweet strawberries. Creamy, indulgent, and timelessly delicious—perfect for any dessert lover.

Ingredients:

- For the Graham Cracker Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted

- For the Cheesecake Filling:
- 4 (8 oz) packages cream cheese, softened
- 1 1/4 cups granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 2/3 cup sour cream
- 2/3 cup heavy cream

- For the Strawberry Topping:
- 2 cups fresh strawberries, sliced
- 1/4 cup sugar
- 1 tablespoon lemon juice

Instructions:

1. Prepare the Crust:
- Preheat the oven to 325°F (165°C).
- In a bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until it resembles wet sand.
- Press the mixture into the bottom of a 9-inch springform pan, creating an even layer.
- Bake the crust for 10 minutes, then remove it from the oven and let it cool.

2. Make the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Gradually add in the sugar and vanilla extract, continuing to beat until well incorporated.
- Add the eggs one at a time, beating after each addition.
- Finally, mix in the sour cream and heavy cream until smooth.

3. Bake the Cheesecake:
- Pour the cheesecake batter over the cooled graham cracker crust.
- Bake the cheesecake for 60-70 minutes, until the center is just set but still slightly jiggly. The edges should be lightly golden.
- Turn off the oven and leave the cheesecake inside for 1 hour with the door slightly open to cool gradually.
- Afterward, refrigerate the cheesecake for at least 4 hours, or preferably overnight.

4. Prepare the Strawberry Topping:
- In a bowl, combine the sliced strawberries, sugar, and lemon juice. Let it sit for 10-15 minutes to macerate.
- Spoon the strawberry topping over the cheesecake just before serving.

5. Serve:
- Slice the cheesecake and serve with fresh strawberries for a deliciously creamy, sweet, and tangy dessert.
