Start your day with this hearty breakfast burrito, stuffed with scrambled eggs, seasoned with salt, pepper, and chili powder, plus your choice of protein: chorizo, applewood smoked bacon, or carne asada. Loaded with sautéed bell peppers and onions, crispy hash browns, melted Oaxaca cheese, and creamy jalapeño avocado crema, it's a bold and satisfying way to kick off your morning!

Ingredients (for 1 burrito):
- 1 large flour tortilla
- 2 large eggs, scrambled and seasoned with salt, black pepper, and a pinch of chili powder
- ½ cup of your choice of protein (chorizo, applewood smoked bacon, or carne asada)
- ¼ cup shredded Oaxaca cheese
- ¼ cup sautéed bell peppers and onions
- 1 small hash brown**, cooked and seasoned with salt
- 1/2 avocado, sliced
- 2 tablespoons sour cream
- Hot sauce (optional)

For the Jalapeño Avocado Crema:
- 1/2 avocado
- ½ jalapeño, seeds removed
- 2 tablespoons sour cream
- 1 tablespoon lime juice
- Salt and pepper to taste

Instructions:

1. Make the Jalapeño Avocado Crema:
   - Blend avocado, jalapeño, sour cream, lime juice, salt, and pepper until smooth. Set aside.

2. Cook the Protein:
   - For chorizo, cook until browned.
   - For bacon, fry until crispy, then crumble.
   - For carne asada, sear for 3-4 minutes per side, then slice thinly.

3. Scramble the Eggs:
   - Season with salt, pepper, and chili powder, and cook until soft.

4. Sauté Peppers and Onions:
   - Cook until softened, about 5 minutes.

5. Prepare the Hash Brown:
   - Cook until crispy and season with salt.

6. Assemble the Burrito:
   - Warm the tortilla and layer the eggs, protein, Oaxaca cheese, sautéed peppers and onions, hash brown, avocado slices, and jalapeño avocado crema:

7. Roll the Burrito:
   - Fold the sides and roll tightly. Optional: Toast in a skillet for a crispy exterior.
