Ingredients:

For the Carne Asada Steak:
- 1 lb skirt steak
- 1/4 cup lime juice
- 2 tablespoons orange juice
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon chopped cilantro
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste

For the Sriracha Garlic Home Fries:
- 2 medium russet potatoes, diced
- 1/2 cup bell peppers (red and green), diced
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 tablespoon sriracha (adjust for heat preference)
- Salt and pepper to taste
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon onion powder
- 1/2 cup Oaxaca cheese, shredded

For the Sunny Side Eggs:
- 4 large eggs
- 1 tablespoon butter or oil for frying
- Salt and pepper to taste

For Toppings:
- 1 avocado, sliced
- 1/4 cup sour cream
- Fresh cilantro (optional)

Instructions:

1. Prepare the Carne Asada Marinade:
- In a bowl, mix the lime juice, orange juice, garlic, olive oil, cilantro, cumin, chili powder, salt, and pepper.
- Add the skirt steak to the marinade, ensuring it's well-coated. Marinate in the refrigerator for at least 1 hour (preferably overnight for maximum flavor).

2. Cook the Carne Asada:
- Preheat a skillet or grill over medium-high heat.
- Cook the steak for 3-4 minutes on each side for medium-rare, or adjust for your preferred doneness.
- Once cooked, let the steak rest for a few minutes before slicing against the grain into strips.

3. Make the Sriracha Garlic Home Fries:
- Heat olive oil in a skillet over medium heat.
- Add diced potatoes and bell peppers, seasoning with salt, pepper, smoked paprika, and onion powder.
- Cook for 8-10 minutes, stirring occasionally, until the potatoes and peppers are soft and golden brown.
- In the last minute, stir in the minced garlic and sriracha sauce. Toss to coat evenly.
- Remove from heat and sprinkle with shredded Oaxaca cheese. Let it melt slightly before serving.

4. Cook the Sunny Side Eggs:
- Heat a small skillet over medium-low heat and add butter or oil.
- Crack the eggs into the skillet and cook until the whites are set, but the yolks are still runny, about 2-3 minutes. Season with salt and pepper.

5. Assemble the Skillet:
- Layer the cheesy Sriracha Garlic Home Fries at the bottom of your serving dish or skillet.
- Place the slices of carne asada steak on top.
- Add the sunny-side eggs to the skillet.

6. Top It Off:
- Add slices of fresh avocado and a dollop of sour cream on top of the eggs and steak. Garnish with cilantro if desired.

Serving:
- Serve immediately while everything is hot and melty, with lime wedges on the side for extra flavor. Enjoy the fusion of bold Mexican flavors with a breakfast classic!
