Here's what you need to make these delicious Double Decker Tacos

:

Corn or flour tortillas, hot

Hard taco shells

Refried beans, warmed

Ground beef

Taco seasoning

Sour cream

Lettuce, shredded or finely chopped

Cheddar cheese, shredded

Tomatoes, diced

Lightly cook some corn tortillas on a griddle or in a heavy skillet

. (Easy, frugal, and YUM!) Or, use taco-sized flour tortillas, warmed.

Cook some dried pinto beans

. Drain, add salt and hot sauce, and mash. Or make some authentic refried beans

. Or open a can of refried beans.

Fry some ground beef with onions and season using my taco salad recipe

, or your favorite taco seasonings (just DON'T leave out cumin!) or a seasoning packet.

Assemble Double Decker tacos by spreading a thin layer of refried beans over a corn tortilla. Place hard taco shell on tortilla and wrap so beans are between the tortilla and the taco shell.

Layer in taco the seasoned ground beef, sour cream, lettuce, shredded cheese, and diced tomato. Enjoy! :)

Recipe: Beef & Mushroom Burgers

Ingredients

1 small onion chopped

150g/5oz small cup mushrooms

450g/1lb lean minced beef

50g/2oz fresh wholemeal breadcrumbs

1 teaspoon dried mixed herbs

1 tablespoon tomato purée

flour for shaping

salt and freshly ground black pepper

Instructions

* Put the onion and mushrooms in a blender or food processor, and whiz until finely chopped. Add the beef, breadcrumbs, herbs and tomato purée, and season with salt and pepper. Blend for a few seconds until the mixture binds together but still has some texture.

* Divide the mixture into 8 to 10 pieces, then press into burger shapes using lightly floured hands.

* Cook the burgers in a non-stick frying pan or under a hot grill for 12-15 minutes, turning once, until evenly cooked. Serve hot.

Tropical Banana Splits With Chocolate:

Ingredients

* 6 firm-ripe bananas

* 6 tbsp brown sugar

* 6 tbsp butter or margarine, melted

* 1 1/2 tsp ground cinnamon

* Vanilla ice cream or frozen yogurt

* Chocolate syrup

* Flaked coconut, toasted

Method:

* To toast, spread coconut on shallow pan and bake in 350 F oven 12-15 minutes or until lightly browned.Instructions

* Preheat grill.

* Peel bananas, reserving half of each banana skin.

* Slice each banana in half lengthwise.

* Place 2 banana halves on a banana skin half and center on a 12-inch piece of heavy-duty foil.

* In a small bowl, combine sugar, butter and cinnamon.

* Spoon over bananas.

* Tightly wrap up bananas.

* Place foil pouches on grill rack and cook 10 minutes.

* Remove from grill.

* Open and remove bananas to serving bowls.

* Spoon cinnamon sauce from foil pouches over bananas,

* Top with scoops of ice cream, chocolate syrup and toasted coconut

Recipe: Panlasang Pinoy Recipes - Pulled Chicken BBQ Sandwich

Ingredients

* 3 (4 oz.) chicken breasts, boneless and skinless

* 1 1/4 cups sweet barbeque sauce

* 2 tablespoons Worcestershire sauce

* 1/4 cup white wine vinegar (or white vinegar)

* 3 tablespoons brown sugar

* a dash of ground black pepper

* 3 (6 inches) sub sandwich bread

Instructions

* Combine the BBQ sauce, vinegar, sugar, Worcestershire sauce, and pepper in a bowl. Mix well.

* Place the chicken in a slow cooker and then pour-in the sauce mixture.

* Slow cook in low for about 5 to 6 hours. Shred the chicken on the 3rd hour and then continue to slow cook. Keep an eye on the cooker to ensure that there is still enough liquid.

* Arrange the slow cooked chicken BBQ in the middle of each sub.

* Serve. Share and enjoy!
