Here's where we get into the stuff that actually applies to Minecraft fanfictions specifically.
Well, sorta.
Obviously if you want a good story, you need a good plot. This is true for all stories.
But, unless you have a great idea for it, I suggest not using one of those plots used by everyone on Wattpad.
For Minecraft specifically, I'd say two of the most used plots are "getting sucked into Minecraft and trying to get out" and "Herobrine's daughter/son".
Now I know of some books on here that have actually put a good spin on those two plots, and are good stories. But a lot of stories with those plots just seem boring.
Try to think of something original. If you need ideas, play Minecraft for awhile. Play single-player, play some mini-games. Whatever gets those creative juices flowing.
I thought of the plot of AMS while building something with my little brother on Minecraft one day. I don't even remember what we were doing, but for some reason, he called Mojang evil as a joke. That got me thinking.
What if Mojang was evil?
If you've read "A Minecraft Story", you know it has a pretty good plot. I'll admit, I didn't execute it very well (more on this later), but I'm still proud of my general plot.
There's an evil government taking control of monsters to take over the world? The main character is the leader of the resistance to this government, but lost all of his memories? That right there is a very original plot.
So yeah. Try to think of something like that. Except don't. Because then it won't be original.
Come up with your own ideas. Play Minecraft. Listen to epic music to inspire you. Watch Minecraft animations or read other Minecraft books, but don't take ideas from them.
When coming up with your plot, you don't need to plan all the details right then. Come up with your general plot first, then get to the details later.
But unless you have a great idea for it, stay away from those two overused plots I mentioned.
If anyone can think of any other plots that are used a lot in Minecraft fanfics, feel free to comment them here.
Authors, feel free to leave any other suggestions on coming up with general plots here.

These chapters are actually pretty quick to write so maybe I won't be as slow with this book ¯\_(ツ)_/¯
