HEALTHY BANANA PANCAKES 🥞

Ingredient:-

1 cup Pancake mix
1 medium Banana,ripen
1 Tsp Cinnamon
1/2 Tsp Nutmeg
1/4 Tsp Flaxseed,ground
1 Egg, separated (room temp)
1 cup Coconut/Almond Milk (room temp)
Cooking spray/Olive oil for frying

Preparation:-

1. In a medium bowl, mix together pancake mix, cinnamon, nutmeg and ground flaxseed.
2. Separate Egg white from Yolk and whip the egg white in a glass bowl until frothy and fluffy. Set aside.
3. In another bowl, mash banana with fork, add egg yolk and buttermilk and mix well.
4. Fold in the whipped egg white and blend together.
5. Add the dry pancake mixture to the wet mixture and mix together until just combined. DO NOT OVERMIX. Set aside for 5-10 mins.
6. Heat a nonstick griddle to 350 F. or a large heavy-bottomed skillet over medium/high heat and add 2 Tbsp oil (I used extra light olive oil).
7. Place ⅓ cup worth of pancake batter onto the preheated griddle or hot skillet. (You can spread the batter out a little if batter is thick and has sat for a while.). You can prepare two at a time if you wish but do not over crowd less they stick together.
8. Cook pancakes until bubbles break on the surface and then flip them over and cook the other side until golden. FLIP ONLY ONCE.
9. Remove from heat and repeat process until all the pancake batter is used up.
10. Lightly spread butter on top of each pancake and place in a stack.
11. Serve hot with Butter, Maple syrup or Honey and Hazelnut spread.
