PICK-AND-MIX SWEETS 🍭

There's no need to head to the sweet shop when you can make your very own pick-and-mix sweets. They can make wonderful gifts for your friends and family.

Coconut Ice

Here's a simple way to make this tasty coconutty treat.

You Will Need:

• 350g desiccated coconut

• 350g icing sugar

• 400g tin of condensed milk

• 1\2 teaspoon of pink food coloring

• a bowl

• a sieve

• a loaf tin

• some plastic wrap

WHAT YOU DO

1. Pour the condensed milk into a large bowl. Sift in the icing sugar by putting it in a sieve and tapping the side of the sieve with your hand.

2. Add the desiccated coconut and stir until there are no dry bits of coconut left.

3. Line a loaf tin with some plastic wrap and spread half the mixture in the bottom.

4. Add the pink coloring to the mixture left in the bowl and stir until it's an even color all the way through.

5. Spread the pink mixture on top of the white in the loaf tin and then place in the refrigerator overnight to set.

6. When the mixture has set, remove it from the loaf tin and cut up into squares.

Peppermint Creams

Delicious and full of minty flavor, peppermint creams make the perfect pick-and-mix partners for your coconut ice.

You Will Need:

• 1 egg white

• 450g icing sugar

• 100g plain or milk chocolate

• 1/2 teaspoon of peppermint flavoring

• 1/2 teaspoon of green food coloring

• a glass bowl

• a pan

• a baking tray covered with foil

WHAT YOU DO

1. Get an adult to help you separate the egg white from the yoke. Pour it into a mixing bowl with the peppermint flavoring and green food coloring. Mix well.

2. Now sift in the icing sugar and stir until the ingredients combine to form a smooth ball - add some more icing sugar if the mixture is a bit sticky.

3. Dust your work surface with a little more sugar and roll the mixture into a long sausage shape about the thickness of a pound coin.

4. Slice into discs about 1/2 cm thick and place on a board to dry.

5. Melt the chocolate. You can do this by breaking it into squares and placing them in a glass bowl. Place the bowl over a pan of barely simmering water and stir until they've melted - ask an adult to help you with this.

6. Dip one side of each peppermint cream into the melted chocolate. Place each sweet onto a foil-covered tray to set.
