This Sugar Cookie Cheesecake is the creamiest, most simple cheesecake ever...all on top of a sprinkle sugar cookie! Classic and delicious!
~Ingredients:
-Sugar Cookie Base:
1/2 Cup Butter, room temperature.
1/2 Cup Granulated Sugar.
1 Egg.
1 Teaspoon Vanilla.
1 Teaspoon Baking Soda.
1 Teaspoon Salt.
1 1/4 Cup Flour.
1/4 Cup Rainbow Sprinkles.
-Cheesecake Layer:
4 (8 oz) Bricks Cream Cheese, room temperature.
1 Cup Granulated Sugar.
2 Teaspoon Vanilla.
4 Eggs.
-Sprinkle Whipped Cream Garnish:
1/2 Cup Heavy Whipping Cream.
1 1/2 Tablespoon Powdered Sugar.
2 Tablespoon Rainbow Sprinkles.
Sugar Cookies Pieces. *
~Directions:
Step 1: Preheat the oven to 325 Degrees Fahrenheit.
Step 2: Lightly spray a 9 inch springform pan with cooking spray, set aside.
Step 3: Prepare the crust first by beating together butter and sugar together for 1-2 minutes until fluffy.
Step 4: Add in egg and vanilla, mixing until smooth.
Step 5: Add in salt and baking soda and mix until incorporated, scraping the sides of the bowl as necessary.
Step 6: Finally add in the flour until it just combined and stir in the sprinkles.
Step 7: Press the cookie dough into the bottom of the prepared pan.
Making the Cheesecake Filling:
Step 8: Beat the cream cheese and the sugar together until smooth.
Step 9: Add in the vanilla and the eggs at a time, mixing in between each until just combined. Don't over-mix and don't forget to scrape down the sides and bottom of bowl during mixing.
Step 10: Pour the cream cheese mixture over the cookie base.
Step 11: Bake in the oven for 55-60 minutes until the center is almost set.
Step 12: Remove from the oven and allow to cool.
Making the Whipped Cream Topping:
Step 13: When the cheesecake is chilled you can make your whipped cream by mixing you heavy cream and powdered sugar in mixing bowl with whisk attachment until stiff peaks form.
Step 14: Add in the sprinkles and mix until combined.
Step 15: Pipe or spread whipped cream on top of cheesecake, garnish with sugar cookies if desired.
Step 16: Eat and Enjoy!
Recipe Notes:
*Optional Garnish. You serve with or without the sugar cookie pieces.
1) Cover and refrigerate for at least 4 hours before serving.
