Cinnamon Roll Cheesecake Bars

A cinnamon graham cracker crust topped with a creamy cinnamon roll cheesecake filling! The sweet and salty, cinnamony graham cracker crust, plus the rich and creamy cinnamon roll swirled cheesecake equals heaven.

~Ingredients:

-Crust:

12 Graham Cracker Sheets.

1/4 Cup Granulated Sugar.

1/2 Cup Butter, melted.

1 Tablespoon Cinnamon.

-Cinnamon Roll Filling:

1/4 Cup Butter.

1/2 Tablespoon Cinnamon Powder.

1/2 Cup Brown Sugar.

1/4 Teaspoon Vanilla Extract.

1 Tablespoon All Purpose Flour.

-Cheesecake Layer:

16 Ounces Cream Cheese, softened.

1 Egg, at room temperature.

1/3 Cup Granulated Sugar.

2 Teaspoons Vanilla Extract.

~Directions:

Step 1: Preheat oven to 350 degrees fahrenheit. Line a 8 by 8 pan with parchment paper, leaving a 2 inch overhang for easy removal. Spray the parchment paper with non stick cooking spray. Set aside.

-Making the Graham Cracker Crust:   

Step 2Pulse the graham crackers in your food processor until fine crumbs form. 

Step 3Add sugar and cinnamon and pulse. 

Step 4Add melted butter and continue to pulse another 30 seconds. 

Step 5Press mixture into prepared pan. 

Step 6Bake for 5 minutes.

-Making the Cinnamon Roll Filling:

Step 7In a small sauce pan combine butter, cinnamon powder, and brown sugar. 

Step 8Cook over medium heat and stir until the butter is melted and ingredients are combined. 

Step 9Stir in the vanilla extract and the flour.

-Making the Cheesecake Layer:

Step 10In a large bowl whisk together egg and sugar until foamy. 

Step 11Add cream cheese and vanilla until smooth. 

Step 12Pour mixture on top of baked crust. 

Step 13Drizzle cinnamon roll filling over cheesecake layer in any pattern you desire and use a toothpick to swirl into cheesecake layer.

Step 14Bake 20 minutes or until cheesecake is set. 

Step 15Allow to cool 30 minutes, then continue cooling in the fridge. 

Step 16When completely cooled, cut and serve. 

Step 17Store in airtight container in fridge.
