Gingerbread Cheesecake Cookie Cups

These Gingerbread Cheesecake Cookie Cups are the perfect way to start off Christmas! A soft, chewy gingerbread cookie cup is filled with a brown sugar spiced no bake cheesecake.

~Ingredients:

-For the Cookie Cups:

3/4 Cup Butter, room temperature.

1 Cup Brown Sugar, lightly packed.

1 Large Egg.

3 Tablespoon Molasses.*

2 Cups All Purpose Flour.

2 1/2 Teaspoon Ground Ginger.

1 Teaspoon Cinnamon.

1/8 Teaspoon Nutmeg.

Pinch of Cloves.

1 Teaspoon Baking Soda.

2 Teaspoon Cornstarch.

-For the Cheesecake Filling:

12 oz Cream Cheese, room temperature.

1 Cup Powdered Sugar.

3/4 Cup Brown Sugar.

1/4 Teaspoon Ground Cinnamon.

1/4 Teaspoon Ground Ginger.

~Directions:

-Making the Cookie Cups:

Step 1: Preheat oven to 350 degrees fahrenheit. Spray the cupcake pan with nonstick cooking spray. Set aside.

Step 2: Cream the butter and the sugar together for 5 - 7 minutes, until light and fluffy.

Step 3: Add in the egg and the molasses and beat until well combined.

Step 4: Combine the dry ingredients in a separate bowl, then add the dry ingredients to the wet ingredients and mix until smooth.

Step 5: Refrigerate dough for about 30 minutes.

Step 6: Make balls of about 2 tablespoon of cookie dough.

Step 7: Press cookie dough into the bottom and about 1/2 way up the sides of each cupcake cup, forming a cup shape.

Step 8: Bake for 10 - 12 minutes.

Step 9: Remove from the oven and allow to cool for about 10 minutes.

Step 10: Use the bottom side of a measuring tablespoon to press in the cups of the cookie if needed.

Step 11: Remove to the cooling rack to finish cooling.

Step 12: Once the cookies have cooled, make the cheesecake filling.

-Making the Cheesecake Filling:

Step 14: Blend the cream cheese, powdered sugar, brown sugar, cinnamon and the ground ginger together until smooth.

Step 15: Pipe or scoop cheesecake filling into the cookie cups.

Step 16: Store in the refrigerator until ready to serve.

*Molasses can be found in either in the baking aisle by the sugar and other sweeteners, or in the cereal aisle by the maple syrup.

**The gingerbread man topper is optional. We got the gingerbread man topper off of amazon (link in the comments).

1) Be sure to grease the pan well so they come out easily. We like to let them cool in the pan too so when we pop them out they hold their shape.

2) You can make these ahead of time freeze them until you are ready to serve them.
