Triple Chocolate Cheesecake Bars

Triple Chocolate Cheesecake Bars-Buttery Oreo crust, creamy chocolate cheesecake then garnished with rich Chocolate Ganache.

~Ingredients:

-For the Crust:

2 Cups crushed Oreo (about 24 cookies).

6 Tablespoon Butter, melted.

-For the Cheesecake:

1 Cup Semi Sweet or Dark Chocolate Chips.

24 Ounces Cream Cheese, softened.

1 Cup Sugar.

1 Teaspoon Vanilla.

3 Eggs.

-For the Ganache:

1/3 Cup Semi Sweet or Dark Chocolate Chips.

1 Tablespoon Heavy Cream.

~Directions:

Step 1: Line a 9 x 13 baking pan with foil, lightly spray with non-stick cooking spray.

Step 2: Combine crushed Oreo cookies with melted butter until all crumbs are moistened. Press crumb mixture into bottom of the prepared pan. Set aside.

Step 3: Place 1 cup of chocolate chips in a microwave safe bowl. Heat on high in microwave for 45 seconds. Remove from microwave and stir until chocolate is completely melted.

Step 4: Heat an additional 15 seconds if needed. Let cool.

Step 5: Beat the cream cream cheese until smooth.

Step 6: Add in sugar and vanilla, beat well.

Step 7: Add cooled chocolate and beat again until combined.

Step 8: Add in the eggs, one at a time, beating just until combined. Make sure to scrap down sides of bowl.

Step 9: Spoon cheesecake mixture over prepared crust and smooth to edges.

Step 10: Bake in a preheated 325 degree oven for 40-45 minutes, until only the center of cheesecake jiggles.

Step 11: Turn off the oven and leave cheesecake in the oven with the door to the oven cracked for 1 hour.

Step 12: After 1 hour, remove cheesecake to rack to cool completely before refrigerating.

Step 13: Let the cheesecake chill for 1 hour before decorating with the ganache.

Step 14: To Make the Ganache: Place the chocolate chips and the heavy cream in a microwave safe bowl.

Step 15: Heat on high for 1 minute.

Step 16: Let the chocolate rest for 5 minutes before stirring.

Step 17: Stir until completely smooth. Let it cool.

Step 18: Spoon the ganache into a pastry bag.*

Step 19: Drizzle chocolate ganache over cheesecake in any design you want.**

Step 20: Refrigerate for at least 4 hours to completely chill before slicing.

*You can also use a ziploc bag with a hole cut out in one of the corners.

**Let your inner 4th grader out and have some fun doodling with chocolate ganache. It may look like scribbles. It may look like a child did it. But when you slice these bars up and put them on a serving plate all you'll see is elegance.
