~Ingredients:
-For the Crust:*
1 1/2 Cups Oreo Crumbs.
2 Tablespoons Butter, melted.
-Cheesecake Filling:
16 Ounces Cream Cheese, room temperature.
1/2 Cup Granulated Sugar.
2 Tablespoons All Purpose Flour.
3/4 Teaspoons Pumpkin Pie Spice.
2/3 Cup Pumpkin Puree.**
1/4 Teaspoon Vanilla Extract.
2 Eggs.
-Vanilla Frosting:
1/2 Cup Salted Butter.
1/2 Cup Shortening.
4 Cups Powdered Sugar.
1 Teaspoon Vanilla Extract.
1 - 2 Teaspoons Milk.
Yellow Gel Icing Color.***
Orange Gel Icing Color.****
Green Gel Icing Color.*****
Mini Chocolate Chips.
Chocolate Chips (regular size).
Mini Black Licorice.
~Directions:
-Making the Oreo Crust:
Step 1: Preheat oven to 325 degrees fahrenheit. Line a square pan with parchment paper. Spray with cooking spray. Set aside.
Step 2: Combine the Oreo crumbs and the melted butter, until well combined.
Step 3: Press into the bottom and the sides of the square pan.
Step 3: Bake the crusts for about 7 - 10 minutes then remove from oven. Allow to cool while you make the filling.
-Making the Cheesecake Filling:
Step 4: Reduce the oven to 300 degrees fahrenheit.
Step 5: In a large bowl, blend together the cream cheese, sugar, flour and pumpkin pie spice on low speed until well combined.
Step 6: Add the pumpkin puree and vanilla extract and mix until well combined.
Step 7: Next, add the eggs one at a time until you have a nice, smooth filling.
Step 8: Spread the filling evenly over the crust and bake the cheesecake bars for 30 minutes.
Step 9: Turn off the oven and leave the cheesecake in the oven with the door closed for 10 minutes.
Step 10: Remove the cheesecake from the oven and chill until firm, 4 - 6 hours or overnight.
