Delicious and creamy mint oreo cheesecake bars that taste absolutely fantastic! They are the perfect bar for any holiday party.
~Ingredients:
-For the Crust:*
4 Cups Mint Oreo Cookies.
4 Tablespoons Butter, melted.
-For the Cheesecake Filling:
3 (8) Ounce Packages Cream Cheese, room temperature.
3/4 Cup Granulated sugar.
3/4 Cup Sour Cream.
1 Teaspoon Vanilla Extract.
1 Teaspoon Mint Extract.
1/2 Teaspoon Salt.
3 Large Eggs.
Green Food Coloring.**
-Topping:
4 Mint Oreo Cookies, crushed.
~Directions:
Step 1: Preheat the oven to 350 Degrees Fahrenheit.
Step 2: Line a 9 by 13 pan with aluminum foil, leaving a 2 inch overhang for easy removal. Spray the aluminum foil with non stick cooking spray. Set aside.
-Making the Crust:
Step 3: Place 28 oreos in a food processor or grinder and pulse until they are finely ground.
Step 4: Add the melted butter and stir until the oreos are moistened.
Step 5: Pour the crumb mixture into the pan and press firmly until the crumbs are evenly distributed.
Step 6: Bake the crust for 10 minutes in oven and remove from oven and set on a cooling rack while you make the cheesecake mixture.
-Making the Cheesecake Mixture:
Step 7: In large mixing bowl beat the cream cheese and sugar about 2 minutes until smooth.
Step 8: Add the sour cream, vanilla, mint extract and salt and beat together for 30 seconds. Scrape down the sides.
Step 9: Add the eggs one at a time and beat well after each addition.
Step 10: Add green food coloring to get desired shade of green.
Step 11: Break the remaining cookies in half and gently pulse them in the food processor so that they are still chunky. Stir them into the cheesecake mixture.
Step 12: Pour the cheesecake on top of the oreo crust and spread evenly.
Step 13: Then we took about 4 oreos and crumbled them on the very top.
Step 14: Bake for 40 minutes until the filling is set around the edges and the middle is a little wobbly.
Step 15: Chill for at least 3 hours or overnight.
Step 16: Keep them stored in the refrigerator when not serving.
Step 17: Eat and Enjoy!

**You can use as little or as much green food coloring you want. It depends on your taste and what kind of food coloring you are using (gel, powder, liquid etc...)
