Includes "Pho", a traditional dish when it comes to Vietnam! Yumin searched the market and the websites, but there was nowhere selling pho, so Yumin had to make it by hand. First, to process rice, clean it, remove sand, grass seeds and other foreign ingredients. Then, soak the rice for more than 4 hours and then take out and drain. Grind the soaked rice with crushed stone mortar and water into a powdered water solution. Next, steam the cake, the dough is diluted, coated evenly on the steamer cloth, steamed by steam. Ripe cakes are air-dried, or left naturally, on a non-stick surface. Finally, the cake is cut with a handwheel or roller. So we have natural noodle cake without any chemicals!
With the noodle cake, Yumin followed by the women in the village to cook the broth with the noodle cake.
Put 3 liters of water and pre-cooked beef in a saucepan and turn on the high heat to boil. When the water is boiling, turn down the heat and remove the foam. After 15 minutes of cooking, add onions, shallots, and pre-cooked ginger, turn on medium heat and cook for 15 minutes. Then, put 1.5 tablespoons of fish sauce, 2 teaspoons of seasoning seeds, 1 tablespoon of sugar and roasted white pepper into the pot.
Strain the onion, purple onion, and ginger through a sieve to get the broth. After being simmered, the remaining broth is 1.9 liters. Then add 3.1 liters of water to the broth and boil. Next, add 1.5 tablespoons of fish sauce, 1 teaspoon of seasoning seeds, 1 tablespoon of sugar, 1 teaspoon of salt and 1 teaspoon of MSG and continue cooking for 10 minutes to complete.
Put the rice noodle cake that has been poured over boiling water into each bowl, Yumin brings the sliced beef and some other necessary ingredients on top of the noodle cake, then pour the broth and bring each person.
The villagers in turn ate well, praising Yumin for being kind and talented.
After eating pho, everyone was treated to another dish by Yumin, "Spring roll"!
