Dean:
He gave you his amulet because when everything was changing (for the better or worse) his amulet was always with him as ou always are.
Sam:
He gave you a copy of a picture that was taken on your first date at Ellens bar because it was the first time he know that he wanted to be with you.
Castiel:
He gave you his trench coat because he knows how much you miss him when he's gone and wants you to feel as if he's always there.
