Hey, people! Ok, I know that I haven't posted a new chapter in like 2-3 weeks and I'm so sorry about that. I have had so many things happen this month. Since school is coming to an end for me, I've been attending a bunch of awards ceremonies and giving farewell speeches, going on "educational" field trips, working on projects, and studying for my finals. It's been chaos! But I finally promoted today, so YAY!!!😋

Since Summer is in literally 2 days (for me at least), I have decided to make a Summer-themed chapter. So if you haven't read the title, here's are some awesome Popsicle DIYs to keep you cool during the summer.

2) Strawberries and Vanilla Yogurt You'll need: strawberries ☀︎ vanilla yogurt ☀︎ granola (opt.)⇒ Directions: 1) Cut strawberries into tiny pieces and place in a bowl. 2) Pour the vanilla yogurt into the bowl of strawberries and stir. 3) Distribute the mixture into the Popsicle molds and insert the Popsicle sticks. (If you decide to add granola, fill half of the mold w/mix, add a thin layer of granola, then fill the rest of the Popsicle mold w/the strawberry and yogurt mixture.) 4) Place the Popsicles in the freezer. Popsicles should be done within 3 hrs.

3) Orange CreamsiclesYou'll need: 1 cup of orange juice ☀︎ 1 cup of heavy cream (or full fat coconut milk) ☀︎ 3 tbs of honey ☀︎ 1/4 tsp of orange extract ☀︎ 1/2 tsp of vanilla extract⇒ Directions: 1) Whisk all of the ingredients together. 2) Pour mixture into Popsicle molds and let it set for 30 min. to 1 hr. 3) Add the Popsicle sticks and freeze for 4-6 hrs (or until frozen).

4) Watermelon & Frozen YogurtYou'll need: 6 oz. of Plain Chobani yogurt ☀︎ 2 cups of seedless watermelon ☀︎ (opt. pinch of salt= sweetness enhancer ☀︎ 1 tbsp. of sugar=sweeter)⇒ Directions: 1) In a blender/food processor, purée the yogurt and watermelon until the mixture is smooth. (Opt. Include the salt/sugar) 2) Pour the mix into the Popsicle molds leaving 0.5 cm. of space at the top of each mold. 3) Freeze for 4-6 hrs (or until frozen).
