Gilbert didn't use to be the loud, obnoxious, guy everyone is used to. When Old Fritz died, he was cold and distant from literally everyone. He talked to no one, didn't even associate with them. He was so crushed he became a bit of a mute for a while because of the heartbreak. That is until Ludwig came along.
