Now, I don't ship Stevidot, but there's plenty of reasons to why it could be a thing(Steven was the one who got Peridot to actually talk to anyone else and he was basically her first friend but that's also just what Steven does so..). I would much rather have them stay just friends instead of getting together, it's just sorta weird. Peridot is a gem and gems are like really old and Steven's only 14, but things are different in gem land(XD) so anything could happen I guess.
