Cookie:
-1/2 cup softened butter
-3/4 cup sugar
-1 egg
-1 teaspoon vanilla
-1/4 teaspoon baking powder
-1/4 teaspoon salt
-1 1/2 cup flour
Filling:
-1/2 cup cranberries, finely ground
-1/2 cup walnuts, finely chopped
-1 tablespoon grated orange peel
-3 tablespoons brown sugar
-2 teaspoon milkInstructions:
Preheat oven to 375°F. In a large bowl, beat butter, sugar, egg, and vanilla until light and fluffy, and then add baking powder, salt, and flour. Refrigerate dough for at least 1 hour. In a small bowl, combine cranberries, walnuts, and orange peel; set aside. On a lightly floured surface, roll dough into a 10-inch square. Combine brown sugar and milk; spread over the dough. Sprinkle with the cranberry mixture, laving about a 1/2-inch edge at both ends of the dough; roll up tightly, jelly-role style. Wrap with plastic wrap; chill several hours or overnight. Cut roll into 1/4 inch slices and place on well-greased cookie sheets. Bake for 14-15 minutes or until edges are light brown. Makes about 3 1/2 dozen.
