If you haven't had this, you need to try it! And if you have tried it, then try it again! I loved this meal so much, but then I like almost any meal with chicken...
Ingredients:
3 or 4 chicken breasts
1 tbsp paprika
50g flour
150g butter
1 tsp chopped parsley
3 tbsp lemon juice
salt and pepper
lemon to garnish (if you want)
Step 1: Which requires you to reach deep inside and find your anger...
Take the chicken breasts and pound them flat. You can do this with a rolling pin or, if you'd rather have less washing up to do, you can punch them instead. I've found it's better to do this on a wooden chopping board, rather than a glass chopping board...
Step 2: Which ends up requiring a lot of cleaning up...
Take the flour, paprika, salt and pepper and mix them together in a saucer or shallow bowl. Dip chicken breasts into the seasoned flour and make sure they are completely covered.
Step 3: Which is pretty straight forward really...
Take the 150g of butter, but don't use all of it. Take 30g of the 150g and use the 30g of butter! Basically, melt 30g of butter in a frying pan and leave the rest of the butter. You'll use it later. Fry the seasoned chicken breasts until they are cooked through. Take the chicken breasts out of the pan and put them somewhere to keep them warm. Or, if you're well enough prepared, you can have another pan on standby for this next bit.
Step 4: Which is where it all gets interesting...
Now you can use the rest of that butter! Melt the 120g of your original 150g of butter in the pan. Mix in the parsley and lemon juice. Let it simmer for a couple of minutes, then pour it into a jug.
Step 5: Serve it out and decorate...
So, serve it out. Pour some of the buttery-lemon sauce over the chicken and garnish with a slice of lemon. We found the meal worked really well with roast potatoes and veg.
