Okay, I'm going REALLY easy on you for the first challenge. This is about the simplest recipe I've made and it's SO nice. And the name is due to my Dad who, I think, wondered why I didn't just make macaroni and cheese :P But I like this version better.
Okay, ingredients (feeds 3-4):
Pasta (I never measure pasta. Enough for four XD)
Scallions/Spring Onions (Whatever you want to call them)
2 Tomatoes
3 Slices of Bacon (YUM!)
230g Cream Cheese
Milk
Cheese
You can add other veggies if you like, but it's kind of a lighter taste. So carrots and such will not suit! Maybe red/yellow peppers. I'm kinda happy with it as it is, but whatever works for you.
Step 1: In which 'washing' does not play a part
Just basically cook the pasta. And remember to salt it. It makes a big difference if you forget!
Step 2: In which we enter the frying stage of the recipe
Aaaaand fry the bacon! Chop it into strips or squares when it's done.
Step 3: In which a knife meets some very scared veggies
Chop the scallions and tomatoes and whatever else you're adding. Chunky is better than thin cut.
Step 4: In which... CHEESE!!!
To make the sauce, heat up a cup of milk and add the cream cheese. Bring it to the boil. You want it to be kind of creamy and, depending on the cream cheese you get, you might have to add a handful of flour.
Step 5: In which everything comes together
So, go get a casserole dish. Add the pasta (obviously drain it first). Add the veggies. Add the sauce. Mix it if you need to. Mostly I find a quick swipe with a spoon is enough. Then grate cheese on top and stick it in the oven at 180*C for 20 mins.
And enjoy! A nice salad goes well with it, or tortilla chips. Or you can just have it on it's own for lunch. French bread would go too, cos baguettes go with EVERYTHING! But I'm sure you can pick good side stuff :P Hope you like it! And seriously, don't die! XD
