Intermediate skill
This dish is the extremely classy sister to Jollof Rice and like her counterpart is always served at events like weddings and naming ceremonies (Africans celebrate naming ceremonies which as the name implies is a ceremony were the child is officially named in front of people and we usually have really long names cos everyone wants to name us, we go by our first and last name tho), she can be served with fish, chicken, shrimp or even a combination of both shrimp and fish or just a plain old salad
INGREDIENTS (Serves 3 - 4)
Rice ( 4 cups)
Olive oil
Chopped liver (skip this if you're vegetarian)
Peas
Green beans
Chopped onions
Carrots (diced)
Salt
Curry
Thyme
Garlic and ginger powder
Chicken broth (water will be fine also)
Chilli
Soy sauce
1 large green belled pepper (chopped)METHOD
* Parboil your rice* Wash the parboiled rice and set aside
* Heat the oil and add the chopped onions
* Add the chopped liver, green pepper and chilli with your salt, sit sauce, curry and thyme and saute for a bit
* Pour in your stock and leave to simmer
* Add your parboiled rice and cook
* Add your chopped carrots, green beans and peas when the rice has almost done and then leave to simmer
Now for the delicious Chapman
INGREDIENTS
Cucumber
Pineapple peel (yes I know I'm writing this again)
Coke
Sprite
Sugar or grenadine syrup
Lemon
Angostura bitters (optional) And to garnish a slice of cucumber or a wedge of any fruit of your choice
METHOD
* Dice your cucumbers and pour in a bowl* Add the pineapple peels to the bowl
* Pour in your coke and sprite
* Add your sugar or grenadine syrup and a bit of lemon juice
* For those who want to seriously reduce the sweet taste, add your bitters
* Cover and refrigerate for a few hours
* Remove the pineapple pills before serving
* Pour into a cup and garnish with cucumber slices
You can now serve your delicious fried rice and Fried fish (or baked fish or shrimp or even chicken) with a glass of Zobo, definitely worth it
