I know I've mentioned Yaji in a lot of recipes and I know I explained it's dried pepper mixed with some other spices and blended, now I'm going to tell you my recipe, Yaji is spicy and sweet at the same time, it can be used when cooking or as a garnish for basically anything (if you like your food a bit spicy), I absolutely love Yaji, it's like gold but in food form.
Please make sure you follow the exact recipe
INGREDIENTS
5 tablespoons crushed Kuli Kuli (110g)
5 tablespoons ginger powder (75g)
1/2 tablespoon garlic powder
2 tablespoons cayenne pepper flakes powder (6g) (seedless)
10 strands of Negro pepper
1 small stock cube (Maggi) (4g)
½ teaspoon saltMETHOD
- Kuli Kuli is groundnut (peanut) cake, To make Kuli Kuli, you simply grind roasted groundnuts, squeeze out the oil from them with a paper towel or napkin, press them into any shape you want and deep fry them in vegetable oil till brown and dry.
- Crush the Kulli Kulli in a grinder, add the cayenne pepper flakes powder and add the Negro pepper, salt and stock cube
- Blend everything together ( a blender or coffee grinder will do the job)
- Sieve the yaji to filter out unwanted particles
- pour into a container and store
Second recipe
½ cup grounded Kulli Kulli
½ cup Ginger Powder
¼ cup Chilli Powder
¼ cup Paprika Powder
¼ cup Onion Powder
¼ cup Garlic Powder
1 table spoon sea salt** Paprika powder in this context is ground dried bell pepper, very similar to ground pepper.
Direction
Combine all of the ingredients thoroughly
Store in an air tight container for future useIt can be used to make suya, to spice up any dish, as a spice for barbeque etc
