Also known as goat head peppersoup, peppersoup is the cure for anything related to cold, it clears up your sinuses and it tastes like heaven, trust me
INGREDIENT
-7 – 8 Calabash nutmeg (ehuru) (de-shelled and grinded)
-3 – 4 tbs Oil bean(ugba) (rinse and boil in salted water)
-1 tbs of Cameroon Pepper powder (you can use freshly ground bell pepper or dry pepper)
-2 tablespoons of ground crayfish
-2 – 3 cooking spoons of Palm oil (depending on how much cow leg you have)
-2 big handfuls of chopped boiled cow leg (de-boned and chopped)
-Edible Potash(akaun) or Native salt or baking soda (pounded into powder and mixed with equal parts of water)
-Chopped Utazi to garnish or basil (scent leaf)METHOD
-Pour the palm oil into a pot and sieve in the potash and water solution
-As you are pouring the potash solution into the palm oil, stir with your other hand and you'll notice the palm oil curdle and change colour to a pleasant shade of orange
-Add the ground seasonings and stir (ground crayfish, ground Cameroon Pepper and Ground calabash nutmeg)
-Add the chopped cow leg and stir
-Once properly combined, the sauce should coat the cow leg, with some still left in the pot. This is what makes Nkwobi yummy
-Strain out the oil bean from the pot of water you boiled it in and add to the pot. Stir properly to combine.
-Place the pot on medium heat to warm the entire thing through. Taste and re-season if needed. (Add a little salt just to enhance the flavour)Voila your Nkwobi is ready, Serve your Nkwobi with onion rings and chopped Utazi (you can substitute Utazi with scent leaf , serve with any chilled drink of your choice
