So the mermaid AU came faster than I was expecting.
Here's my concept of Merman! Varian

I lent against a rock, keeping myself hidden from sight, but I could still see her. She was sat on the sand, not too far from me. I couldn't help but sigh. She was stunning.
The way her h/c hair cascaded down her shoulder, to the way her eyes shone in the sunset. She was always here, every night, just as the sun set. And I was here, every night, to admire her.
As I watched her stare at the sunset, I didn't notice Rudiger, a raccoon-fish hybrid, swimming up to me. He jumped on my shoulder, and I yelped, falling off the rock.

The loud splash caught the girl's attention, and she walked towards the source of the sound. "Hello? Who's there." Upon receiving not response, she investigated further.
Peering over the rock, she was caught off guard by a raccoon with a fish's tail. It chittered happily, splashing about in the water. She smiled at it, taking in it's appearance.
"What are you? Apart from cute, of course." She said, lifting up the creature, unknowingly letting Varian swim away. He sighed in relief, knowing that he was safe for another day.
"W-who are you?" Varian jumped at the voice, swiveling to face the h/c haired girl he had been admiring earlier. He saw her eyes flit from his face, down to his teal-coloured tail, and back up again.
"I assume this little thing is yours?" She said, leaving Varian shell-shocked. She wasn't freaking out about his tail, or anything that he had seen other humans do.
"Are you okay? You're awfully quiet."
Varian shook his head, slapping his face a couple times to make sure he wasn't dreaming.
"Uh yeah, I'm good. You're surprisingly calm." He said, the last part coming out in a snarky tone that was completely unintentional.
"So, mermen are real?" She said, leaning on the rock as she studied his tail. He nodded, and swished his tail a bit, allowing her to examine it more.
"Oh! How rude, I'm Y/N." She stuck out her hand, to which Varian happily shook. They smiled at each other, holding back the utter ecstasy imploding within them. Varian was finally talking to the girl he spent days admiring, and Y/N was finally meeting the merman her bedtime stories had told her of.
"I'm Varian. And as you can probably tell, I'm a merman. The only one, believe it or not." Varian said, as he sat up in a more comfortable position.
The pair spent hours conversing, learning of each other's lives, family and history. Varian told her the story of the Moondrop Flower, and how it cursed him with the tail, while Y/N contradicted the story, with her own tale of the Sundrop Flower, and how it was the reason she was still alive.
As the moon lowered, and the sun began to rise, the two realised that they had been talking all night, and Y/N knew she had to return home before anyone became aware that she was missing.
"I'll see you tomorrow, right?" Varian said, and Y/N brushed the sand off her clothes. She giggled, leaning over to place a quick kiss on Varian's cheek, before nodding, and leaving the beach.
Once she was out of sight, Varian flopped against the rock, giggling in delight. Rudiger, who had been asleep the whole time, clambered back into Varian's shoulder, as he swam back to his ocean home.

Weeks passed, and every day, at sunset, Varian and Y/N would meet at the same rock. Sometimes, Y/N would bring a picnic basket full of food for them to share.
As time went by, Varian came to realise that he was completely and utterly in love with Y/N. Something about her just lit a spark in his chest, that erupted into fireworks in his heart.
He hoped she felt at least somewhat the same, even if he wasn't exactly fully human. His thoughts of Y/N distracted him from the actual Y/N walking up to the rocks.
"Hey, Varian." Her voice sounded monotone, very different to her usually happy tone of voice.
"Are you okay, N/N?" Varian said, hoping that his nickname for her would lighten her mood a little, but it was unsuccessful. The usually bright and happy girl remained monotone and sad.
"Varian. I'm going away. My parents don't think it's safe anymore. Because of the rocks I was telling you about. They destroyed our house, and all of our belongings. I'm sorry." All her words tumbled out at once, making it hard for Varian to understand.
"W-wait, go back. You're leaving?" Tears pricked in the corners of his eyes, as he thought of his one and only Y/N leaving. "Forever?"
"I'm so sorry. I want to stay. I want to stay with you." Y/N said, as she hugged Varian (a very awkward thing to do when he was still somewhat submerged in water). He looked into her e/c eyes, seeing the tears that were threatening to spill everywhere.
"If you have to leave, I need to tell you something." Varian said, as he lifted Y/N's chin up. "I love you."
Varian pressed his lips against Y/N's, causing her to freeze up, but eventually melt from the warmth of Varian.
As they kissed under the sun and moon, Y/N felt a strange feeling in her legs, and broke away from Varian to check what was happening.
Varian was as shocked as her to see the (colour) tail that was replacing her legs. Her shocked expression turned to one of joy as she thought of spending the rest of her life under the sea with Varian.
"Well, I didn't expect that to happen." Varian stared at her tail, before looking back at her joyful expression. "You seem way to happy about having a tail replace your legs."
"I'm happy, because now I don't have to leave. I can stay with you, forever." Y/N slid herself off the sand, and into the water, Varian following behind her.
As their lips connected one again, they intertwined their tails, bringing each other closer. Rudiger paddled over, swimming happy circles around the couple.
They pulled away, leaving their foreheads touching.
"I love you." Y/N said, kissing Varian's cheek again.
"I love you too."
