Second quote: "To prove what they're worth amidst their sins, the game begins. A frightening chance to be saved"
In the SAW films, John Kramer forces people to be in his torture games when he thinks they’re ungrateful for the life that they have been blessed with. All his victims have sinned in the past, so besides wanting them to be grateful for life, he wants them to confess for their crimes.
He wants to see them prove what they are really worth to see if they are actually worthy of living their life.

Fifth quote: "I savour every puzzled scream, a piece of them to carry with me"
This line does a play on words with the word “puzzled” which simultaneously references the fact of being confused and how during the SAW movies the killer removes a puzzle shaped piece of flesh from his victims. The confusing aspect of the line shows how the victims are not only puzzled by the games they must play but also why they are placed in such a horrible situation.

Sixth quote: "Two rats in a cage, one reborn and one to mourn"
In the SAW franchise, two people are usually pitted against each other in a “Game” to prove they deserve the chance to live. The line “Two rats in a cage” is a play on words to make it seem like the “players” are just like lab rats that are experimented on. One “player” is reborn by surviving the trap and the other “player” usually dies proving that they are unworthy of a second chance in life.
The line could also reference the medieval mean of torture where rats were placed on the abdomen of a victim, covered by a cage over them with a hot coal on top. The rat, trying to escape the overwhelming heat, would dig into the victim’s abdomen and escape through their body, eventually killing them.

Eighth quote: "game over"
It's obvious. Perhaps the most famous line from the SAW series, this line closes out every movie up until the newest release in the series, Jigsaw.
The line is delivered by Jigsaw himself or one of his accomplices, ensuring that somebody has lost the game; sometimes referring to somebody placed in a trap, sometimes referring to somebody trying to capture Jigsaw.
