Omurice is a legendary dish. It is commonly show in animes at maid cafes. Cute images and words are usually drawn onto the omelette with ketchup. There is also the famous runny omurice that splits in half and almost melts as you cut into it, but it requires a lot of skill to make. Instead we will focus on the simpler classic version. It is a chicken fried rice topped with a basic omelette drizzled lightly with ketchup. This is something that you can eat everyday!

Ingredients:
½ onion (finely diced)
1 boneless skinless chicken thighs (diced 1 cm)
3 Tbsp extra virgin olive oil
½ cup frozen mixed vegetables (defrosted)
Salt TT
Freshly ground black pepper TT
1½ cups cooked Japanese short grain rice
1 Tbsp ketchup
1 tsp soy sauce
2 large egg
2 Tbsp milk
6 Tbsp sharp cheddar cheese
Steps:
1. Gather all ingredients
2. Heat the oil on a non-stick pan. Saute the onions until softened. Then add the chicken and cook until it is no longer pink.
3. Add the defrosted mixed vegetables and season with salt and pepper
4. Add the rice and break it up into small pieces. Then add in the soy sauce and ketchup. Thoroughly mix the ingredients together and transfer it into a plate.
5. Make the omelettes one at a time. In a bowl, combine 1 egg and 1 Tbsp of milk.
6. Heat 1 Tbsp of extra virgin olive oil over medium-high heat. Pour the egg mixture into the pan when it is hot. Cover the entire bottom of the pan.
7. When the bottom of the egg is set, lower the heat and add 3 Tbsp of cheese
8. Add half of the fried rice onto the omelette and then fold two opposite sides of the omelette towards the middle (so that it covers the rice).
9. Move the omelette to the edge of the pan and slowly flip the omelette over onto a plate.
10. Repeat steps 5-9 to create the second omelette.
