During the Mando-Jedi wars, they dealt with this is a characteristically practical fashion; they used slugthrowers (aka ordinary firearms) instead, because if a Jedi tries to deflect a regular bullet, what happens is "a bunch of bullet shrapnel to the Jedi's face".
