180g chicken thigh or breast
3 nori sheets (cut into squares)
1 cup cooked sushi rice
1/2 Lebanese cucumber
1 clove garlic
2 tbsp teriyaki sauce
2 tbsp soy sauce
Spring onions
Kewpie
mayonnaise
Chilli Flakes
LimeMethod
1. Preheat the oven to 400 degrees F
2. Cook sushi rice to packet instructions
3. Cut chicken into small cubes and marinate with garlic and teriyaki sauce
4. Cut nori sheets into 12 squares (3 sheets)
5. Spray the muffin tray and carefully place each nori sheet pressing down with cooked rice as a weight to hold down
6. Place an even amount of marinated chicken on each
7. Cook for 12-15mins in the oven, observing, so the nori doesn't burn
8. Remove from oven and place cucumber on top
9. Garnish with mayo, chili flakes and lime
