Spinach Bean Soup

1 small onion, chopped2 medium garlic cloves, minced, or 2tablespoons bottled minced garlic1 15.5-ounce can no-salt-added navybeans, chickpeas, or pinto beans,undrained, or ½ heaping cup driedbeans1 14.5-ounce can no-salt-added dicedtomatoes, undrained1¾ cups fat-free, low-sodium chickenor vegetable broth1 teaspoon ground cumin¼ teaspoon pepper4 tightly packed cups spinach, largeleaves torn or chopped

Lightly spray a large pot with cooking spray.Cook the onion and garlic over medium-high heat for 5 minutes, or until theonion is very soft. Stir frequently.Stir in the beans with liquid, tomatoes with liquid, broth, cumin, and pepper.Bring to a boil. Reduce the heat to medium. Stir in the spinach. Cook for 10 to15 minutes. Stir occasionally.
