Yes, stoic characters falling in love is a very tough character development that is quite troubling for me too. I'm always freaking out if I'm writing the character's personality correctly and whether any changes visible in them because of falling in love makes sense or is relatable or is making them out of character. But all said and done, stoic characters are human too and fall in love like every other person.
A stoic person, I believe, would have trouble expressing their love no matter how quickly or slowly they would fall in love with someone. Their love would be noticeable through subtle gestures that they would show only towards the person they love and care for.
For example, if he/she would speak harshly to others, their tone may be softer when speaking to their love interest. Or, they may not use swear words or frown and instead have a placid expression. If they are the type that doesn't swear and is silent stoic, they would perhaps be a bit touchy with their significant other, trying to experience the closeness whenever they can - touch their hair, sit close together maybe even while embracing, touch their knuckles when they're dining together, etc. They will always search for their loved one amidst a crowd of people, react to the sound of their voice in the distance, and feel calm and comfortable when in their presence.
Another way to express their love would probably be by doing things that would express their care and concern. Maybe they'd help with housework while letting their partner sleep in, or buy their favorite food on the way back from work, or even take care of an important job that might have been forgotten.
I think that a stoic person would always have their loved one on their mind and would be oblivious to the fact that other people know it through their simple but sweet gestures.
These are some possibilities that I think seem to make sense for someone who is aloof. I'm sure there are still several other examples that could be thought of for a stoic character to express their affection for another.
