Fresh cut Salsa
The basic ingredients for salsa are tomato, onion, garlic, jalapeño, salt, pepper, lime juice and cilantro. Once you have that mastered, you can dress it up as you like. This is my favorite mix. This is the mild version.
3 cups of fresh tomato, chopped, seeds removed
1/2 cup of green bell pepper, chopped
3/4 to 1 cup fresh onion, chopped
1 sweet chili pepper, like a fresh (NOT pickled) banana pepper or 1/2 an Anaheim chili, minced
2 tsp of fresh jalapeno pepper, minced
1 large garlic clove, minced
1/3 cup cilantro/coriander
1 to 2 tsp of dried cumin
dash of chili powder
2-3 tbsp lime juice
salt and black pepper
Stir together, chill in sealed container for a couple/few hours before serving. Probably will keep for 4 to 5 days, but if you love salsa as much as I do, it will only last a couple. If you want a hotter salsa, reduce cilantro and lime, up the amount of garlic, chili powder, and jalapeno.
Honestly, this is so good you can make a meal out of soft frying some corn tortilla's, heating a little refried or black beans, and heaping on the salsa. That's all you need.
