I just realized how many of the recipes I have on here are very hearty, but rather fattening. So, for the more health concious, Black Bean Salad
Black bean dressing:
1/3 cup of canned black beans, drained
1-2 Tbsp olive oil
1- 2 Tbsp lime juice
1 garlic clove, minced
1/4 cup fresh chopped cillantro/corriander (or 2 tsp dried)
salt, pepper
1/2 to 1 tsp cumin
1 dash of chili powder
Mix together in bowl, adjusting oil to lime juice and cumin to cilantro to taste. Do not mash black beans.
Salad:
Lettuce, tomatoes, green peppers, avocado, jicama. Onions of you like ( I don't). One handful of lightly crushed tortilla chips.
Pour dressing over and enjoy.
