Yup, we know. Flax Seed is good for you, but here is where you can add it to a recipe and it actually tastes good.
Remember that flax seed is best for you when it is ground. Like most other grains, a whole flax seed as a hard shell that can allow it to pass through the digestive tract almost completely untouched. So work with the ground seed when you can.
3/4 cup flour (actually, a little bit over that)
1/2 cup ground flax seed (..and a little bit under this)
2 1/2 tsp of baking powder
3 tbsp of sugar
1/2 tsp salt
1 egg
3/4 cup milk (If you want them thicker, lessen milk. If you want them thinner, add more milk.)
3 tsp vegetable oil
pinch of nutmeg (Just a pinch. Nutmeg is very strong and easy to get carried away with. You do not want to make "nutmeg pancakes," but just add a little something to regular pancakes.)
Mix in a bowl. Let sit for a few minutes for the baking powder to start doing its thing and then cook like a regular pancake (over medium heat on greased pan, wait until the edges have started to cook and the bubbles in the center pop and leave little holes behind. Flip, and cook for a couple minutes more). The batter will be more glutinous than normal pancake batter, but don't worry. It will come out light and fluffy just like a regular pancake.
I usually have these with butter and brown sugar.
