Pancakes

Pancakes for breakfast anyone? No, just you, well that's fine - just halve this recipe and then you wont waste anything. That's what I do.

INGREDIENTS:

1 1/2 Cups Self-Raising Flour

1 teaspoon Baking Powder

2 Tablespoons Caster Sugar

Pinch of salt

2 Eggs, Lightly beaten

1 Cup Milk

60g Butter

METHOD:

Sift flour, baking powder, sugar and salt into a bowl and make a well in the centre.

in a jug mix together the eggs, milk and butter, then pour into well all at once.  Mix in well.

Cover and set aside for 20 mins.

Heat fry pan, bush lightly with butter. pour in some of the batter. Cook for 1 min, or until underside is golden. Turn pancake over and cook other side, about 10 seconds.

Top with favourite toppings.

Additionally you can add choc chips to the pancake too. What I do is add them when I put the batter in the fry pan, this way if someone doesn't want choc chip pancakes then you can easily make them a plain one.
