Lemon Butter

Homemade Lemon butter on toast, yum. 

This recipe I found in a magazine, its either a Jamie Oliver or Curtis Stone recipe, I can't remember, but it is good.

INGREDIENTS:

2 Eggs

1/2 Cup Sugar

1/4 Cup Fresh Lemon Juice

2 teaspoons Lemon rind/zest

1/4 Cup Butter

METHOD:

Bring water to the boil on stove.

Whisk all ingredients, except butter, together in a Stainless steel bowl. Place over boiling water, whisk in butter.

Whisk until it becomes thick and creamy and coats the back of a spoon.

Remove from heat and whisk until most of the heat dissipates. Set aside to cool, stirring occasionally.
