I've tried a few different recipes for pumpkin scones, but I have found that these are the one's I like best. They come from my "Family Circle, step-by-step, Scones and Muffins" Cookbook.
INGREDIENTS:
30g Butter, Chopped
2Tbsp Caster Sugar
1/2 Cup Mashed Cooked Pumpkin
1 egg, lightly beaten
1/2 Cup Milk
2 1/2Cups S.R Flour
Pinch of salt
Milk, for glazing
METHOD:
1. Preheat Oven - 210C . lightly flour tray. Using electric Beaters, beat the butter and sugar in a small bowl until light and creamy. Add pumpkin, egg and milk, mix well.
2. Sift Flour and salt into large bowl. Make a well in the centre; add almost all of the pumpkin mix. mix lightly with a flat-bladed knife to a soft dough, adding more liquid if necessary.
3. Knead dough briefly on a lightly floured surface. press or roll out dough to 2cm thickness.
4. Cut dough into rounds using a small round cookie cutter. Place scones together on prepared tray. Brush with a little milk. Bake 10-15minutes, depends on your oven, until scones are golden brown.
