The term kuudere (クーデレ) comes from the Japanese pronunciation of the English word "cool" (クール). Kuuderes are characters who are calm and blunt. They're serious, never panis, and tend to take charge of the situation. These characters oftem speak in an emotionless monotone and seem to not be bothered by what's going on. Kuunderes usually seem to not know how to show emotion and are scared to show any weakness.
Great examples of kuundere characters are Mei Misaki from "Another", Rei Ayanami from "Neon Genesis Evangelion", Homura Akemi from "Mahou Shoujo Madoka Magica", Minami Iwasaki from "Lucky Star", Len Tsukimori from "La Corda D'Oro", Kanade Tachibana from "Angel Beats!", Hancock Boa from "One Piece", Riza Hawkeye from "Fullmetal Alchemist", Origami Tobiichi from "Date A Live", and Eucliwood Hellscythe from "Kore wa Zombie Desu ka?".
