  "Pas de Cheval" is narrated by a narcissist who believes he has a significant influence on the lives of everyone around him. "Pas de cheval" can be translated from French to mean "leg of the horse," and it's also a move in ballet named for its resemblance to how a horse pulls in its leg before kicking it out. Both of these meanings can be tied to the saying get off your high horse  which is said to people who act like they're better than others, like the speaker.

Jon Walker:  [Guitarist] Ryan [Ross] and I came home one night – I was living with him while we were recording – we ended up writing a whole song that was a bunch of different parts. And this song is probably about half of that song. We mixed up some parts and redid some parts. Then as we started playing it with the rest of the guys it turned into this.

The song contains many narcissistic lines, and this verse sets the tone for the rest of the track.

Ryan tells listeners that a girl, presumably an ex, didn't realize how lucky she was to have him, and the thoughts of what could have been and the memories they made together will haunt her forever. This isn't uncommon for those who meet Ryan — he claims everyone is mesmerized by his presence and misses him when he's gone. No one he comes in contact with realizes how big of an impact he will have on their lives.

  "Pas de cheval" is a French term for a misstep or a mistake, which literally translates to no horse.  The "mistakes" others are making is not appreciating him while he's around. Ryan wants to toast  and pay tribute to these naive people who don't realize his worth. On a more general level, they're giving a shout out to people who make mistakes every once in a while, like humans are supposed to.

  The speaker is trying to make you imagine what it would be like to know him in a fan's opinion. Most fans dream of meeting their idols, and this song suggests that it'd be quite the experience, but as many warn, meeting your idols isn't always a great thing.

  The speaker continues to paint themself as a class act. Wine is a drink that's considered classy, but "they," likely an ex of Ryan, doesn't drink anything that's nearly as high class as him.
