Eckleburg is named after a character in Fitzgerald's novel The Great Gatsby. In the novel, he is an oculist. However, he only appears as a billboard advertising of an oculist named Eckleburg that features a pair of giant disembodied blue eyes with glasses, covered by yellow spectacles.
